Add new flavours to your Iftar this Ramadan

A time for love, a time for togetherness, a time to bond, a time to grateful. The holy season of Ramadan is the most significant time of the year for the people in the Middle East & Turkey. The lanterns are bought out, the house is well-decorated, and most exciting of all is the preparations for the delicious Iftars that break the fast cycle and bring together friends and family.

While ‘Staying at home’ is the safest during these times, Ramadan with family and friends may not be the same this year. Nonetheless, the spirit of the season never changes. With busy kitchens preparing a delicious buffet, the traditional flavours take first place on the menu. But there is a growing trend of generation Z home chefs who welcome new flavours to the Iftar table.

While there are many articles with recipes on traditional dishes in the Middle East & Turkey, here are a few easy to prepare picks from global cuisines that will add the perfect flavourful twist to your iftars.

Egg Fried Rice

Ingredients:

  • Cooked chilled rice
  • Eggs
  • Carrots, onions, green onions and peas
  • Garlic
  • Soy sauce
  • Oyster sauce
  • Toasted sesame oil/ normal sunflower oil
  • Butter

Method:

  1. Scramble some eggs with a small portion of the butter in a pan to small portions and set aside. Transfer content to a plate.
  2. Add the remaining butter to the pan and sauté the veggies and garlic. Once slightly soft, push the vegetable to one side of the pan.
  3. Add in the cold cooked rice, soy sauce and oyster season and mix well for 30 seconds. Thereafter continue to stir in with the sautéed veggies in an interval of 30 seconds. Do this for another 3 minutes.
  4. Once mixed well, remove the pan from heat and add in the green onion, eggs and season with pepper. Mix well and garnish with parsley or coriander (optional).

Meat Quiche

Ingredients

  • 1 homemade or store-bought single-crust pie dough
  • 6 large eggs, well beaten
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 cup cooked ground beef sausage
  • 1/2 cup diced chicken ham
  • 2 large green onions, chopped
  • 1 cup shredded cheese

Method:

  1. Preheat oven to 425º. Press crust into a 9-inch quiche pan, prick crust and bake until lightly browned, about 10 minutes.
  2. In a large bowl whisk together the eggs, milk, salt and pepper. Sprinkle the sausage, ham, green onions, and cheese evenly on top of precooked crust. Pour the egg mixture on top.
  3. Bake for 20 minutes until the center is set and a toothpick comes out clean. Allow to cool slightly before serving.

Chicken Tacos Recipe

Ingredients:

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper, to taste,
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 tablespoon canola oil
  • 12 mini flour tortillas, warmed
  • 1 avocado, halved, peeled, seeded and diced
  • 1/2 cup chopped fresh cilantro leaves
  • 1 lime, cut into wedges 

Method:

Chocolate Mousse

Ingredients:

  • 3 tablespoons unsalted butter
  • 6 ouncessemisweet chocolate
  • 3 large eggs, yolks and whites separated
  • 1/2 teaspoon cream of tartar
  • 1/4 cup plus 2 tablespoonssugar
  • 1/2 cupheavy cream, cold
  • 1/2 teaspoon vanilla extract

For Serving

  • 1/2 cupheavy cream, cold
  • 2 teaspoonssugar
  • Chocolate shavings

Method

  1. Place the butter in a medium microwave-safe bowl and melt the chocolate into it. Allow mixture to cool. Once cooled, whisk in egg yolks one at a time. Set aside.
  2. In another bowl, beat egg whites until foamy. Add the cream of tartar and beat until soft peaks form. Gradually beat in 1/4 cupof the sugar and continue beating until stiff peaks form. Using a spatula, fold the egg white mixture into the chocolate mixture until uniform. Set aside.
  3. In another bowl, beat the heavy cream on medium-high speed until it begins to thicken up. Add the remaining 2 tablespoons of sugar and the vanilla and continue beating. Fold the whipped cream into the chocolate mixture.
  4. Divide six portions in slim glasses, and chill for up to 2 hours. Top it with whipped sugary cream and chocolate shavings.
